The core range is sourced from a small family run business that produce product made to traditional European recipes. Made in commercial premises, the product complies with Australian regulatory requirements and the Big Salami team takes pride in the fact that the range uses regional produce such as Byron Bay grass fed beef and Casino pork.

Being a temperature stable product has seen the demand for their range to expand to online sales and they now also attend multiple regional markets and field days.
