Blue Sky Cheese is the NSW Central West’s only cheese business!
The team are passionate about making hand crafted cheeses the old-fashioned way – with skill, passion and intuition.
Using all local products is a natural part of the Blue Sky Cheese ethos. Their logo, a red tailed black cockatoo, is an icon of the west, and all the graphics were created by Mendooran artists.
Their chosen milk comes from Little Big Dairy, a single-source dairy in Dubbo and their cheese factory is housed within the commercial kitchen at the Mendooran Showgrounds.
“Basically, we make fantastic cheese in a tin shed! Everyone seems inspired just by the fact that we are ‘having a go’, making cheese during a drought.”
The current range of Blue Sky Cheese includes ‘Castlereagh Camembert’ - a traditional creamy cheese with a soft white bloom. Their popular ‘Peppertree Feta’ is a smooth, versatile cheese, and has just been awarded a silver medal at the 2019 Dairy Industry Association of Australia Australian Dairy Product Competition. For lovers of blue, the Blue Sky Cheese ‘Beni Blue’ is a semi-hard blue-vein cheese with a piquant flavour and a natural rind.
Founded in September 2018, the Blue Sky Cheese team decided to exhibit at Nosh 2019 to support local events and showcase their products.
